The groundbreaking of Pike Road Coffee marked a significant milestone in the journey of Greg and Karen Lipscomb and their family. The groundbreaking was held on December 10 and attended by Mayor Gordon Stone, the Pike Road Coffee staff, and their family and friends. The location of Pike Road Coffee, set to be at 569 Pike Road in the Warehouse next to Local and Bloom, is poised to become a hub for friends, families, and residents to gather and connect.
Karen Lipscomb’s dream of opening a coffee shop in Pike Road began in December 2022. With Greg’s passion for roasting coffee and Karen’s love for baking, they combined forces to establish Pike Road Coffee, LLC in March 2023. The journey towards realizing this dream started with their first pop-up shop in September 2023, followed by the development of architectural plans and the completion of building plans in June 2024. With construction now underway, the anticipated completion date for the new location is set for May 2025.
For Karen, the groundbreaking symbolizes years of hard work, dedication, and planning. She shared that building a business is a marathon, not a sprint, and is grateful for the unwavering support from her husband Greg, their five children, and the Pike Road Coffee staff. Karen attributes the vision and means for this endeavor to God, emphasizing that Pike Road Coffee is a place of service and community.
The vision for Pike Road Coffee is centered around providing a space for people to come together, share memories, and foster fellowship. The location is set to open in the second quarter of 2025 and will offer a variety of offerings, including fresh baked pastries, breakfast and lunch items, house-roasted coffee, and a full espresso bar. This establishment aims to be a welcoming space where Pike Road residents and customers can feel at home, reflecting the Lipscombs’ commitment to building community relationships.
In the meantime, Pike Road Coffee will continue to operate its pop-up shops and pickups, offering a taste of what’s to come.
